Recipe of the Week - Chickpea Coleslaw & Vinaigrette
Between the cabbage and garbanzo beans (chickpeas), this coleslaw adds
a nutritious punch to any meal. Serve as a main course or side dish.
3 cups shredded green cabbage
3 cups shredded red cabbage
1 cup shredded carrots
1 cup diced green onions
2 cups thinly sliced celery
4 cups garbanzo beans (chick peas)
1 teaspoon celery seed
2 teaspoons yellow mustard
8 tablespoons white vinegar
2 packets Truvia sweetener
4 teaspoons olive oil
Sea salt & pepper to taste
- Dressing: Whisk all dressing ingredients in a bowl and set aside.
- Combine all coleslaw ingredients in a large bowl.
- Pour dressing over coleslaw, and mix well.
