Turn the Corner for a Healthier You

Recipe of the Week - Gazpacho

This refreshing chilled soup is a great way to add vegetables to the menu. You can add avocado slices or cilantro as you serve it. And for a change of pace, purée the soup.

Ingredients

4 cups cold tomato juice
1 small, well-minced onion
2 cups freshly diced tomatoes
1 cup minced green pepper
1 tsp. honey
1 clove garlic, crushed
1 diced cucumber
2 scallions, chopped
juice of ½ lemon and 1 lime
2 Tbsps. wine vinegar
1 tsp. each tarragon & basil
dash ground cumin
¼ cup freshly chopped parsley
dash Tabasco sauce
1 Tbsp. olive oil
pepper to taste

Directions

  1. Combine all ingredients and chill for at least 2 hours.

Makes 6 servings.
